Do you have a before picture? It's quite hard to imagine with no comparison that your teeth is ready for debracing.

15 mos update, gaps are almost completely gone

Bottom braces changed to metal due to my teeth touching the ceramic brackets (did not want to risk tooth chipping).

Yeah, bite into said sandwich then swish water in mouth vigorously or chew gum afterwards it should collect all of the sandwich residues

I would go with ceramics especially for adults since metals are noticeable especially during your first few months + makes your teeth look dark in pictures, just my two cents.

Go for the ceramic self litigating ones so you wont have to deal with ligatures (no staining, less time adjusting,etc).

Unless you're getting the X-rays and molds done on the same day + ortho's time of studying the mold and planning out the position of each teeth I wouldn't trust on same day braces. An ortho needs time to study the mold so that he/she could plan out the best method in which to move your teeth. For ex...
