HI Lola,
im about to have the same setup as you and was also concerned about coffee as i am similarly afflicted with a caffine addiction. I posed the same question a couple of weeks ago and have quite a few replies so have a look through my old thread.

Relax!! DRINK YOUR COFFEE!!!
Ceramic brackets DO NOT STAIN!
The rubber ligs may stain, depending on the color you choose. If you have clear or white, there will be staining. Many on here choose pearl or silver to be more discrete without the staining.
Otherwise, choose dark ligs and you'll be fine.
Again, BRACKETS DO NOT STAIN!. I'm a little surprised your ortho told you they would.

I have got also ceramics and i have at least 6 cups of coffe and a box cigarettes a day and once a week a glass of red wine. I had never ever any stains on the brackets. And with a minute of extra brushing even my 3 months old silver rubber ligs aren't looking too bad.
Just try it, it's not a big deal clean the brackets and change the ligs.

DRINK THE COFFEE
I couldn't give up my coffee either. So, believe it or not, I drink my coffee thru a straw to avoid staining. I know it sounds crazy, but it seems to be working!
GO GET THE COFFEE.
GO GET THE COFFEE.
Sorry for the misunderstanding..I am aware that the ligs and not the brackets stain, and that they are changed, but I don't really want to stain them and have to live with them for a few weeks like that. I was told I could drop in at any time to have them changed if they did stain, but I'd rather not have to do it a lot. Had a glass of red wine last night...through a straw!!! Abstinence was never my strong point! I wouldn't have been able to relax drinking it normally so it was a straw or nothing!
